Veganuary: Week 3 – Doing my bit!

Firstly, how is it nearly the end of January already! It’s only just begun and the year already feels like it’s flying by. That said, I cannot wait for our adventures to begin in April, so I am happy for time to keep whizzing by until then.

It’s been just over three weeks since I began Veganuary. I really truly thought I was going to struggle giving up certain food, but actually I feel great! I feel like a huge sense of guilt has lifted from me, like for the past few weeks I’ve been doing my bit. And like I said, it feels great!

Not too many new revelations from week three – I feel like I’ve been too busy to really cook anything good, but there are a few things I’ve noticed these last few days.

Not all vegan cheese is bad

So in my last post I described how disgusting vegan cheese is (I may have even called it evil…) but since then I made a pizza using vegan mozzarella and it was yummmm!

So I’ve had to amend my opinion slightly. Perhaps it was just that mature cheddar alternative that was bad. But we’ll see. With every new cheese comes a new opinion.

There are so many great snacks

I was so prepared for their to be milk and eggs in the most random things. So many people had told me that it pops up in food you would assume was vegan. But I really haven’t found this to be true.

This week I’ve discovered some great snacks (and perhaps now I should really begin cutting back on these…).

  • Caramel Snack A Jacks
  • Coco Shreddies
  • Tesco bacon rashers
  • Sainsbury’s fizzy fangs
  • No Chick’n nuggets from the new Plant Kitchen range!

So yeah, I’ve done lots of unnecessary eating and should probably try to put a stop to that. Or at least put a limit to the snacking anyway!

How am I going to keep this up in the van?!

One thing I have been thinking about this week, is how I’m going to keep up my vegan cooking/eating once we’re living in the van full time. We have a hob so there’s still a lot I can do, but I’m really going to miss being able to roast veg!!

So I’ve been putting some thought into what I can make. Considering starting  a cook book or a recipe section on this blog. If only there were several more hours in the day to do it all!

My aim for next week

Before Veganuary is up, I’m determined to have a go at making some vegan peanut butter cakes, from my beautiful friend Emma Hatcher over at ‘She Can’t Eat What?’ Very excited about those!

But as the month is nearly over, keep an eye out for my final instalment coming up in the next week or so! And let’s see if I carry on or reach straight for the cheddar!
